Gluten-Free Chocolate Chip Cookies to be exact.
Yes, for the love of sweets I wanted some cookies that were gluten-free but without a premade flour. I’ve come up with my new favorite gluten-free chocolate chip cookie. I’ve always made them but just used gluten-free flour from King Arthur. This is great don’t get me wrong, but I’ve been wanting to switch it up AND I was out of my King Arthur Measure for Measure gluten-free flour. I wanted cookies right this minute! So what is a girl to do? Well pull out every damn ingredient in the cupboard and find something that will work.
I had recently made bread that had a mix of almond flour, tapioca flour, and coconut flour AND I had all three! In my head, I was trying to figure out what ratios would work. Somehow by the grace of the cookie fairy, I made what turned out to be some pretty decent chocolate chip cookies. These are gluten-free but not vegan.
Gluten Free Chocolate Chip Cookies
Ingredients
- 1 3/4 Cup Almond Flour Grind extra
- 1/4 Cup Coconut Flour
- 3/4 Cup Tapioca Flour
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 Cup Butter Softened
- 3/4 Cup Organic Sugar
- 3/4 Cup Brown Sugar or Coconut Sugar
- 2 tsp Vanilla
- 1 Egg
- 1 Cups Chocolate Chips
Instructions
- I ground the Almond flour a bit more in a blender. Put all dry ingredients in bowl, stir to combine. Beat butter until smooth, add sugars and cream together. Add vanilla and egg. Beat until combined.Mix in dry ingredients, then stir in chocolate chips.Scoop small cookie scooper sized cookies and bake about 11 minutes. Cool and enjoy.
